Serves: 6-8

Greek Salad

1  red onion, cut in rings
1  iceberg lettuce, torn
1  garlic clove, minced
1  cucumber, thinly sliced
1  green pepper, sliced
1/2 Cup  olive oil
1/2 Teaspoon Salt
1/4 Cup  lemon juice
1/4 Teaspoon Dried leaf oregano
1/4 Pound Feta cheese, cubed
1/4 Teaspoon Freshly ground pepper
16  Kalamata olives
3 Tablespoon Chopped parsley
4  medium tomatoes, cut in wedges
8 Each Anchovy fillets, optional

Recipe Directions:
For dressing, whisk together oil, lemon juice, garlic, salt, pepper and oregano. Arrange lettuce on a serving platter. Arrange remaining ingredients over lettuce. Whisk dressing and pour over the salad and toss well. Serve immediately.
