The ultimate use for overripe bananas. This version uses melted butter for a moist, dense crumb.

  • Ingredients: 3 ripe bananas (mashed), 1/3 cup melted butter, ¾ cup sugar, 1 egg, 1 tsp vanilla, 1 tsp baking soda, 1 ½ cups flour.

  • Method: 1. Mash bananas and stir in the butter. 2. Mix in the sugar, egg, and vanilla. 3. Sprinkle the baking soda and salt over the mix, then fold in the flour. 4. Pour into a greased loaf pan and bake at 175°C for 50–60 minutes.

4. Simple Focaccia with Herbs

Focaccia is the most forgiving yeast bread. You can top it with whatever you have in the pantry.

  • Ingredients: 2 cups warm water, 1 tsp honey, 1 tbsp active dry yeast, 4 cups flour, 1/4 cup olive oil, flaky salt, and rosemary.

  • Method: 1. Mix water, honey, and yeast; let sit for 5 minutes. 2. Add flour and salt, mix until a sticky dough forms. 3. Let rise for 1 hour in an oiled bowl. 4. Stretch into a sheet pan, dimple the surface with your fingers, drizzle with more oil, and add herbs. 5. Bake at 220°C for 20 minutes.
